Busy Weekend

Seems like we are always leaving the house on Saturday's, mainly because you can't keep a kid inside all day (wish we could sometimes)!
I bought wings the day before so I needed to marinate them that morning while we were going to be out.


I found a Honey Lime recipe highly recommended by a co-worker so I used that.


It calls for garlic, soy sauce, juice/zest of limes, honey, tabasco and salt.




I placed them in the fridge for about 8 hours then baked them that night.  They were O.K. but could use some tweeking :)

Then we headed out for D's haircut.  Margot has cut his hair since he was 6 mos old (she has cut mine for 15 yrs).  I calculated and he will only have ONE more haircut before he starts Kinder, so I went ahead and made that appt too.

 

Olive Garden is right by the salon so we enjoyed some lunch.  Dominic enjoyed playing tic tac toe with Daddy and winning (wink) every time!

Then we pressed on in the extreme heat and ran over to Memorial City Mall.  D is really big on 'big boy' undies like his Daddy.  Another words, solid undies, no pictures on them.  He also needed some socks and we are slowly buying clothes for big boy school.


On our to-do list was a stop at the pet store for some treats for his grandparents dog, Sasha.  He is leaving tomorrow to spend 8 days with them in the Hill Country and he wanted to bring her some.  While there, we spotted some new digs for Donut (our beta fish).  Seeing as football season is on the horizon, well you see below that Donut got in on that and he got a touch of the tropics as well.

Here is the new home for Donut, fresh new vibrant colors.  The rest of the evening we hung out inside and cooked the wings.



Sunday was all about staying home swimming and relaxing as much as possible with a 5 yr old boy.

Mommy went to the grocery store early so she could spend time in the pool also.  Seems I am usually prepping food, cooking or cleaning and doing laundry.  I was determined to RELAX.


And last but not least we grilled out delicious kabobs!

Helping me cook and hanging out on a Friday night

Last Friday I decided I wanted to cook something easy, affordable and quick!  Kevin usually cuts the grass, Dominic is in and out and I am always picking up around the house. Kevin and I are usually tired from the work week so we like to eventually relax. Wait!  Relax? Not with a 5 yr old boy that never sits down!

 I am burnt out on Friday sandwiches or pizza and although Chinese take-out sounded divine I am always watching the budget!

I decided on beefy mac.  Not sure what else to call it but it's ground meat, macaroni, tomato sauce and cheese.  Here is Dominic helping me brown the meat.


Oh and I bought some fresh bread to cut into baguettes....


Season and brown the ground meat, drain and combine with cooked macaroni noodles and 1-2 cans of tomato sauce.  I had a handful of grated parmesan left over so I mixed that inside the casserole.

Meanwhile Daddy finished the lawn and the boys were cooling off in the pool.


I put more cheese on top (shredded Mexican blend) then baked in the oven until heated through.
Here is the finished product!  Delicious and a hit with my family!

Cars 2, Kinder prep, Vaca in Kerrville!

I am well aware this is not a newsflash to anyone but each Summer it seems to get hotter than the Summer before.  I live in Texas and it's always hot and humid however, the East Coast is making the news these days with the heat!  Welcome to our world of dreading the Summer weather!!  We have spent A LOT of time in the pools but other than that we are not outside.

There a just a few things going on with us.  Last weekend our little trio headed out for some lunch, run errands and finally got to see this:



Kevin and I were a bit disappointed!  The whole movie focuses on Mater the tow Truck and it was just kinda all over the place.  That and well we missed the 11am so we had to go to the 1:30p and Dominic was tired and antsy and so were we.  He got us up at 6am on a Saturday!   Ugh.......

We are officially 4 weeks until starting KINDER!  Oh me, oh my!  We have purchased a new backpack, a few new clothes and a new big boy lunch kit and thermos!  We have spent a lot of time talking about what he can expect, how his days will be filled with fun learning and ideas about what we can pack for his lunch.  Kevin and I are ready for him to start but it is bittersweet.

Lastly, Dominic is supposed to go visit his grandparents for a full week in Kerrville next Friday.  I say "supposed" to because well he has never done it before (without us at their house) and he still has time to change his mind.  So far, so good though and he seems excited.  (SO are we!)  I mean it's either go to school/ daycare everyday or spend a week sleeping in, feeding the deer, playing with the dog, going to Sea World, etc.....you get the picture and hopefully he does too!
